Classic Swiss Steak

This timeless, soul-soothing recipe for Swiss steak makes an exquisite supper, great for gatherings around the family table. Tenderized round or rump steak is slowly simmered alongside a mix of tomatoes, onions, bell peppers, carrots, and earthy mushrooms, ending in a dish bursting with rich, deep flavors. Pair this inexpensive yet tasty steak over a bed of rice to absorb its wonderful sauce.

Ingredients

      • 1 cup all-purpose flour

      • 1 tablespoon of kosher salt

      • 1 ½ tablespoons freshly ground black pepper

      • 2 teaspoons paprika

      • 1 teaspoon of garlic powder

      • 2 pounds round or rump steak (approximately 1 inch thick)

      • 1 ½ teaspoons vegetable oil

      • 1 onion, finely chopped

      • 1 green bell pepper, chopped

      • 2 carrots, peeled and thinly sliced

      • 8 ounces mushrooms, sliced 2 (14.5-ounce) cans stewed tomatoes

      • 1 tablespoon fresh parsley, freshly chopped

Directions

1. Season and tenderize the steak :

      • In a small dish, whisk together the flour, salt, pepper, paprika, and garlic powder. Tenderize the steak by using a mallet, then fully cover both sides with the seasoned flour mixture. Press the spices well into the meat for a maximum absorption of flavor.

2. Sear the Meat :

      • Heat vegetable oil in a large, heavy-bottomed pan or Dutch oven over medium-high heat until shimmering. Carefully place the steak onto the pan, searing for roughly 3 minutes without moving it to generate a golden crust. Flip and cook for another 2 minutes. Once browned, remove from the pan and put aside.

3. Prepare the vegetables :

      • To the same skillet, bring the chopped onion, bell pepper, carrots, and mushrooms. Sauté the veggies for roughly 5 minutes, periodically stirring, until the onion becomes translucent and the vegetables begin to soften.

4. Simmer the meat :

      • Pour in the stewed tomatoes and nestle the meat and its collected juices back into the pan. Allow the mixture to attain a medium simmer. Cover the pan, decrease the heat to low, and let it braise for around 1 ½ hours until the steak becomes melt-in-your-mouth soft.

5. Serve with Style :

      • Garnish the meal with freshly cut parsley. Serve the Swiss steak with its tasty tomato and vegetable sauce over a warm bed of rice for an entirely gratifying eating experience.
