Make the Cordial : Grab a vegetable peeler and strip the zest off the ruby grapefruit—don’t get the white pith, it’s bitter. Toss the zest and sugar in a jar, mix it up, and stick it in the fridge for 24 hours. Let the flavors get to know each other.

Mix the Juice : After 24 hours, squeeze the grapefruit for about 1/2 cup juice. In the same jar, pour in the grapefruit juice, lime juice, and water. Stir in that kosher salt. Give it a good stir or shake until the sugar dissolves. Strain out the zest—you don’t need it anymore. Now, your salted grapefruit cordial is ready. (This stuff lasts for 3 days in the fridge, so make it ahead if you want).

Make the Punch : When it’s party time, combine your salted grapefruit cordial, extra grapefruit juice, and lime juice in a punch bowl. Chill it until you’re ready to serve. Right before serving, pour in the club soda for that fizz. Throw in the citrus ice ring if you made one—it’s optional but definitely adds a cool factor.
