This Air Fryer Pork Tenderloin with Sweet Potatoes is a quick and flavorful meal that perfectly balances the sweetness of pineapple preserves with a hint of spice. The tender, juicy pork and caramelized sweet potatoes make this a dish you’ll want to cook again and again.
Ingredients
-
-
- ¼ cup olive oil (plus extra for greasing)
-
½ cup pineapple preserves
-
½ teaspoon granulated garlic
-
½ teaspoon cayenne pepper
-
1 teaspoon salt (or to taste)
-
½ teaspoon freshly ground white pepper (or to taste)
-
1 ½ pounds sweet potatoes (cut into 1-inch pieces)
-
2 ½ pounds pork tenderloins
-
Step-by-Step Directions
1. Preheat the Air Fryer
If your air fryer’s manufacturer recommends preheating, set the air fryer to 390°F (200°C) to ensure even cooking.
2. Make the Pineapple Marinade
In a large mixing bowl, combine ¼ cup olive oil, ½ cup pineapple preserves, ½ teaspoon granulated garlic, ½ teaspoon cayenne pepper, 1 teaspoon salt, and ½ teaspoon white pepper. Stir well until all ingredients are evenly combined.
3. Toss the Sweet Potatoes
Add the sweet potato pieces to the mixing bowl and toss them thoroughly with the pineapple mixture. Once coated, remove the sweet potatoes and place them on a plate, making sure to reserve the remaining pineapple marinade.
4. Prepare the Pork Tenderloins
Pat the pork tenderloins dry with paper towels. Place them into the same mixing bowl with the reserved pineapple marinade and coat them well.
5. Arrange in the Air Fryer Basket
Lightly grease the air fryer basket with the remaining olive oil. Place the tenderloins in the basket in a single layer, and add as many sweet potato pieces as will fit around the tenderloins without overcrowding. Set aside any extra sweet potatoes for the second batch.
6. Air Fry the Pork and Sweet Potatoes
Air fry for 10 minutes. Afterward, flip the tenderloins over to brown the other side and stir the sweet potatoes to ensure even cooking, keeping them in a single layer. Air fry for an additional 10 minutes, or until the pork reaches an internal temperature of 145°F (63°C). If needed, continue air frying the pork in 5-minute increments until done.
7. Cook the Sweet Potatoes to Perfection
Remove the sweet potatoes from the air fryer once they are tender and caramelized. If the sweet potatoes are finished cooking before the pork, transfer them to a warm plate and cover them.
8. Rest the Pork and Finish Cooking
Once the pork tenderloins are fully cooked, remove them from the air fryer and tent them with foil. Allow them to rest while you cook the remaining batch of sweet potatoes, about 10 more minutes.
9. Serve and Enjoy
Slice the tenderloins and serve with the perfectly caramelized sweet potatoes on the side. Add a drizzle of extra pineapple preserves for a sweet touch, if desired.
Cook’s Notes
- I used pineapple preserves without added sugar.
- This recipe works best in a 5.3-quart basket-style air fryer. Adjust cooking times based on the size and type of air fryer you use.
- Sweet potatoes may need 20 minutes to cook, so if the pork finishes cooking first, remove the sweet potatoes and keep them warm. Add any remaining sweet potatoes and continue cooking as needed.
