Lemon Poppy Seed Pancakes

Ingredients

      • 1 rounded tablespoon white sugar

      • 1 tablespoon lemon zest (or more to taste)

      • 5 teaspoons poppy seeds

      • 1 large egg

      • 3 tablespoons butter, melted (plus more for greasing the pan)

      • 3 tablespoons lemon juice

      • 1 cup whole milk

      • 1 1/2 cups all-purpose flour

      • 1 teaspoon kosher salt

      • 2 teaspoons baking powder

      • 1/4 teaspoon baking soda

      • Lemon wedges, for serving (optional)

Directions

  1. Infuse the Lemon Flavor:
    In a small bowl, combine the sugar and lemon zest. Stir to mix them well, and let the mixture sit for about 15 minutes. This step helps the lemon zest release its essential oils, giving the pancakes a burst of lemony flavor.
  2. Prepare the Dry Ingredients:
    In a separate large bowl, whisk together the all-purpose flour, kosher salt, baking powder, and baking soda. Set this aside.
  3. Mix the Wet Ingredients:
    Add the poppy seeds, egg, and melted butter to the sugar and lemon zest mixture. Whisk thoroughly until well combined. Next, whisk in the lemon juice and whole milk. Gradually add the dry ingredients to the wet mixture, whisking gently just until the flour disappears. Be careful not to overmix! Allow the batter to rest for 10 to 15 minutes. This resting time helps the pancakes become fluffy and ensures an even texture.
  4. Cook the Pancakes:
    Heat a nonstick skillet over medium heat, and generously grease it with melted butter or vegetable oil. Once hot, pour about 1/3 cup of the batter into the skillet for each pancake. Cook until a few bubbles appear and start to pop on the surface, about 3 to 4 minutes. Flip the pancake and cook the other side for an additional 3 to 4 minutes, until golden brown and cooked through.
