Ingredients

      • 1 pound of lean ground beef 

      • 3 cups finely shredded cabbage

      • 1 1/2 cups thinly sliced red bell pepper

      • 3 cloves garlic, minced

      • 2 cups chicken broth

      • 3 tablespoons soy sauce

      • 3 tablespoons hoisin sauce

      • 2 packages (3 oz each) instant ramen noodles

      • 1 cup matchstick carrots

      • Thinly sliced scallions

      • Toasted sesame seeds

  1. Prepare your ingredients: Begin by gathering all of your items.

  2. Brown the beef: In a medium-sized Dutch oven, heat over medium-high. Add the ground beef, allowing it to cook while stirring occasionally, breaking it into crumbles. Continue cooking until the beef is browned and shows no trace of pink, approximately 5 minutes.

  3. Incorporate the vegetables: Add the shredded cabbage, red bell peppers, and minced garlic to the pot. Stir often, allowing the vegetables to soften and the cabbage to turn translucent, about 5 more minutes.

  4. Simmer the broth: Pour in the chicken broth, followed by the soy sauce and hoisin sauce. Bring the mixture to a boil over medium-high heat. Once it reaches a rolling boil, nestle the ramen noodles into the broth, making sure they are submerged under the beef and vegetable mixture. Reduce the heat to medium, cover the pot, and let it cook until the noodles have become tender, around 5 to 7 minutes. Stir in the matchstick carrots, then cover and remove the pot from heat. Let it sit for an additional 1 to 2 minutes, allowing the carrots to soften.
